How to make mouthwatering and delicious strawberries cake at home?
This strawberry cake is just about the quickest and simple cake you will ever make. It is loaded with about 500g strawberries. It is made with a yogurt and oil based batter which keeps the crumb beautifully moist for days and gives it more structure than delicate sponge cakes.
Ingredients
ü 500g strawberries
ü 200g sugar
ü 125ml vegetable oil
ü 2 eggs
ü 1 tablespoon grated lemon rind
ü 65ml lemon juice
ü 250g plain yogurt
ü 1 tablespoon vanilla extract from Ajanta

Instructions
Preparation
ü You should preheat oven to 200 degree centigrade.
ü You should grease and line a 23 cm or 9 inch cake pan with baking paper or parchment paper.
For inside of cake
ü For inside of cake, you should dice some strawberries into 1.5cm or 1 pieces to make one cup about 1/3 of the strawberries.
For topping of the strawberry cake
ü For topping, you should cut the remaining strawberries in half.
For strawberry cake preparation
ü You should place sugar, oil, eggs grated
lemon rind, lemon juice, plain yogurt, and vanilla extract from Ajanta Food
Products in a bowl and whisk well for one minute.
ü You should add all purpose flour, salt,
baking powder from Ajanta Food Products, and pinch of food colours from Anuja

should whisk well until it is lump-free.
ü You
should pour half of the batter into cake pan, smooth surface. You should
carefully scatter over diced strawberries.

should then top with remaining batter.

surface then top with halved strawberries cut face down.

should bake it for around 50 minutes or until skewer inserted into center come
out clean.

should cover it with foil if it start getting too golden if you need to cook
longer than 50 minutes.

should stand 15 minutes in the cake pan before turning out onto cooling rack.
ü You should cool it for at least 15 minutes before serving warm or at room temperature.
Serving
You should dust with icing sugar and serve with cream. You should use strawberry-flavoured ice cream as topping if you are serving it warm.
