  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1-2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Pinch of food colours from Anuja Food Colours (optional)

Directions:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and set aside.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, using a hand mixer or stand mixer.
  • Beat in the eggs, one at a time, then add the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to over mix.
  • Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  • To create the surprise center, divide the batter into small bowls and add a few drops of food coloring to each bowl, stirring until well combined. Spoon small dollops of each colored batter into the center of each cupcake.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  • While the cupcakes are cooling, prepare the frosting. In a mixing bowl, beat the softened butter until smooth. Gradually add the powdered sugar, milk, and vanilla extract, mixing until creamy and smooth. Add food coloring if desired.
  • Once the cupcakes are completely cooled, frost them using a piping bag or spatula.
