Ingredients:

For the cake:

 For the frosting:

  • 1/2 cup unsalted butter, softened
  • 2-3 cups powdered sugar
  • 2-3 tablespoons milk or cream
  • 1 teaspoon vanilla extract
  • Pinch of red food colour from Anuja Food Colours

 Instructions:

 For the cake:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans or line them with parchment paper.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the eggs, buttermilk, and vanilla essence.
  • Gradually add the wet ingredients to the dry ingredients, mixing until well combined and smooth.
  • Divide the batter evenly between two bowls
  • Add red food colour to each bowl and mix until you achieve the desired colors.
  • Pour the colored batter into the prepared cake pans, spreading it out evenly.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely before frosting.

For the frosting:

  • In a large mixing bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  • Add the milk (or cream) and vanilla essence, and continue beating until smooth and creamy.
  • Adjust the consistency by adding more powdered sugar for a thicker frosting or more milk for a thinner frosting.
  • Divide the frosting into separate bowls and add food coloring to each bowl to match the colors of your cake layers.
  • Once the cake layers are completely cooled, assemble the cake by spreading frosting between each layer and on top and sides of the cake.
  • Decorate the cake as desired with sprinkles, candies, or additional frosting.
  • Serve and enjoy your colorful birthday cake!
