For the Cake:
- 2 1/2 cups all-purpose flour

- 1/2 cup unsalted butter, softened

- 225g cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- Pinch of vanilla essence from Ajanta Food Products
- A pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, baking soda, baking powder, and salt. Set aside.
- In another large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Add the oil and vanilla essence, and mix until smooth.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Add pinch of pink rose food color to the batter.
- Divide the batter evenly between the two prepared cake pans. Smooth the tops with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, beating on low speed until fully incorporated.
- Add the vanilla essence and a pinch of salt. Increase the speed to high and beat until the frosting is fluffy.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a thick layer of cream cheese frosting on top.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
- Optionally, you can decorate the cake with sprinkles, edible pearls, or fresh fruit.
- Slice and serve your cake!
