  • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the butter and sugar together with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla essence
  • With the mixer on low speed, add the flour mixture in three parts, alternating with the milk, beginning and ending with the flour mixture.
  • Divide the batter evenly into three bowls.
  • Leave one portion plain (white), add red food coloring to the second portion, and blue food coloring to the third portion.
  • Mix until the colors are well combined.
  • Pour each colored batter into the prepared pans and smooth the tops.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

For the frosting:

  • In a large mixing bowl, beat the butter on medium speed until creamy, about 2 minutes.
  • Gradually add the sifted powdered sugar, about 1 cup at a time, beating on low speed until incorporated.
  • Add the heavy cream, vanilla essence, and a pinch of salt.
  • Beat on high speed for about 3 minutes until the frosting is light and fluffy.
  • If the frosting is too thick, add more cream, a tablespoon at a time, until you reach the desired consistency.
  • Once the cakes are completely cool, spread a layer of frosting on top of the blue cake layer. Place the white cake layer on top and spread a layer of frosting on it. Finally, place the red cake layer on top and frost the top and sides of the cake.
  • Optionally, you can decorate the cake with additional red, white, and blue sprinkles or fresh berries for a festive touch.

Tips:

  • Ensure all ingredients are at room temperature for the best results.
  • To create even cake layers, use a kitchen scale to divide the batter equally.
  • Chill the cake layers in the refrigerator for easier handling and frosting.
  • Enjoy your vibrant and delicious Red, White, and Blue Layer Cake!
