Ingredients:

  • 2 cups mixed dried fruits (raisins, currants, chopped dried apricots, etc.)

Instructions:

Prepare the Fruit Mix:

  • In a large bowl, combine the mixed dried fruits, candied cherries, chopped pineapple, and nuts.
  • Pour the orange juice over the fruit mix and stir well.
  • Let this soak for at least 4 hours or overnight for the best flavor.

Prepare the Cake Batter:

  • Preheat your oven to 325°F (163°C).
  • Grease and line an 8-inch round cake pan or a loaf pan with parchment paper.
