Ingredients:
For the Fruit Mix:
- 2 cups mixed dried fruits (raisins, currants, chopped dried apricots, etc.)
- 1 cup chopped candied cherries
- 1 cup chopped pineapple
- 1/2 cup chopped nuts
- 1/2 cup orange juice

Instructions:
Prepare the Fruit Mix:
- In a large bowl, combine the mixed dried fruits, candied cherries, chopped pineapple, and nuts.
- Pour the orange juice over the fruit mix and stir well.
- Let this soak for at least 4 hours or overnight for the best flavor.
Prepare the Cake Batter:
- Preheat your oven to 325°F (163°C).
- Grease and line an 8-inch round cake pan or a loaf pan with parchment paper.
- In a medium bowl, sift together the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, beat the softened butter and brown sugar together until creamy.
- Add the eggs one at a time, beating well after each addition.
- Stir in few drops of vanilla essence
- Gradually add the sifted flour mixture to the wet ingredients, alternating with the milk. Mix until just combined.
Add the Fruit Mix:

- Gently fold the fruit mixture into the batter.
