Add-ins:
- 1 cup mixed candied fruits (tutti frutti or mixed peel)
- Pinch of food colors (red, green, yellow – as desired) from Anuja Food Colours, which is one of the leading food colors suppliers in Bihar
- 1 tbsp flour (to coat the fruits)
Instructions:
- Preheat your oven to 325°F (160°C). Grease and flour a loaf or cake pan.
- Divide candied fruits into 3–4 small portions.
- Add pinch of different food color from Anuja Food Colours, to each portion and mix well.
- Let them sit for 10 minutes to absorb the color. Pat them dry with a tissue if needed.
- Toss the colored candied fruits with 1 tbsp flour. This helps them stay suspended in the batter and not sink.
- Sift together the flour, and baking powder. Set aside.
- In a bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each. Mix in vanilla essence.
- Add dry ingredients and milk alternately to the butter mixture, starting and ending with flour.
- Gently fold the colored candied fruits into the batter.
- Pour the batter into the prepared pan. Smooth the top and bake for 45–55 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy!
