Red Strawberry Cake Recipe

Instructions:

  • Preheat the oven to 180°C (350°F).
  • Grease and line an 8-inch round cake tin.
  • Puree 1 cup of fresh, cleaned strawberries using a blender.
  • You should get about ¾ cup of puree.
  • In a bowl, sift flour, baking powder, and baking soda.
  • Set aside.
  • In another mixing bowl, whisk together sugar, oil, and vanilla essence until light.
  • Add the strawberry puree, red food color, and milk. Mix well.
  • Gradually fold in the dry ingredients. Stir until the batter is smooth.
  • Add lemon juice (optional) and give it a final mix.
  • Pour the batter into the cake pan and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
  • Let it cool completely before removing from the pan.

Optional Strawberry Cream Frosting:

  • ½ cup heavy cream
  • 2 tbsp strawberry puree
  • 1–2 tbsp powdered sugar

Whip all ingredients together until soft peaks form. Spread over the cooled cake.
