Red Strawberry Cake Recipe

Ingredients
- 1½ cups all-purpose flour
- 1 cup fresh strawberries (pureed)
- 1 cup sugar
- ½ cup vegetable oil or melted butter
- ½ cup milk

Instructions:
- Preheat the oven to 180°C (350°F).
- Grease and line an 8-inch round cake tin.
- Puree 1 cup of fresh, cleaned strawberries using a blender.
- You should get about ¾ cup of puree.
- In a bowl, sift flour, baking powder, and baking soda.
- Set aside.
- In another mixing bowl, whisk together sugar, oil, and vanilla essence until light.
- Add the strawberry puree, red food color, and milk. Mix well.
- Gradually fold in the dry ingredients. Stir until the batter is smooth.
- Add lemon juice (optional) and give it a final mix.
- Pour the batter into the cake pan and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
- Let it cool completely before removing from the pan.
Optional Strawberry Cream Frosting:
- ½ cup heavy cream
- 2 tbsp strawberry puree
- 1–2 tbsp powdered sugar
Whip all ingredients together until soft peaks form. Spread over the cooled cake.
