Fruit Cake Recipe with Pink Frosting

Ingredients:

For the cake:

·         1½ cups mixed dried fruits (raisins, cherries, apricots, cranberries)

·         ½ cup butter

·         ¾ cup sugar

·         2 eggs

·         1½ cups all-purpose flour

·         ¼ cup milk

·         ¼ cup chopped nuts (optional)

·         ½ cup orange juice (for soaking fruits)

For the pink frosting:

·         1 cup butter (softened)

·         2 cups powdered sugar

·         1–2 tbsp milk

Instructions:

·         Soak the dried fruits in orange juice for at least 2 hours, or overnight if possible. This adds moisture and flavor.

·         Set it to 180°C (350°F).

·         Grease and line a medium-sized cake tin with parchment paper.

·         In a large bowl, cream together butter and sugar until light and fluffy.

·         Add eggs one at a time, beating well after each addition. Mix few drops of vanilla essence.

·         Sift flour and baking powder together.

·         Gradually fold the dry mixture into the wet batter, alternating with milk.

·         Mix until smooth.

·         Gently fold in the soaked fruits and chopped nuts.

·         Pour the batter into the prepared tin and bake for 35–40 minutes, or until a skewer inserted into the center comes out clean.

·         Let it cool completely.

Prepare the frosting:

·         Beat butter until creamy.

·         Gradually add powdered sugar and milk until light and fluffy.

Decorate:

·         Spread or pipe the pink frosting evenly over the cooled cake.
