      One cup of whipping cream

      2 tsp of sugar

Instructions

      Start by preheating your oven to 170C.

      Grease 8 inch baking tin and line it with parchment.

      In a bowl, mix the flour, baking powder and baking soda.

      Set it aside.

      In another bowl, blend the mango pulp, oil, sugar, and vanilla essence until smooth.

      If you want a brighter shade, mix in the food color at this stage so it spreads evenly.

      Add the eggs one at a time or add curd if you are making the eggless version.

      Stir until the mixture looks uniform.

      Add the dry ingredients to the wet mixture in two batches.

      Fold gently so the cake stays light.

      Do not overmix.

      Pour the batter into the prepared tin and tap it lightly to release air bubbles.

      Bake for about 30-35 minutes.
