Banana Cake with Yellow Frosting

·         3/4 cup unsalted butter or oil

·         1 cup brown sugar

·         2 large eggs

·         1 and 1/2 cups mashed ripe bananas

For the Yellow Frosting

·         2 cups whipping cream or buttercream base

·         1/2 cup powdered sugar

Method

Prepare the Batter

 

·         Preheat oven to 180°C. Grease and line two 8 inch cake tins.

·         Sift flour, baking powder, and baking soda in a bowl.

·         In another bowl, beat butter and brown sugar until creamy.

·         Add eggs one by one, then add mashed bananas and vanilla essence.

·         Add the dry ingredients alternately with milk and mix until smooth.

Bake

·         Pour batter into prepared tins and bake for 30 to 35 minutes or until a toothpick comes out clean.

·         Allow cakes to cool completely.

Yellow Frosting Preparation

·         Beat whipping cream or buttercream with powdered sugar and vanilla essence until light and fluffy.

·         Add pinch of yellow food colour from Anuja Food Colours gradually until you get a soft pastel yellow shade.

Assembling the Cake

·         Level the cake layers.

·         Place one layer on a serving plate, spread frosting evenly, then place the second layer on top.

·         Frost the entire cake with yellow frosting.
