Vanilla Cake with Pink Frosting

Ingredients

For the Frosting

  • 200 grams unsalted butter, softened
  • 3 cups icing sugar, sifted
  • 3 tablespoons heavy cream
  • Few drops of vanilla essence
  • Pinch of pink food colour from Anuja Food Colours, which is one of the best food color companies in India

Steps

  • Preheat your oven to 175°C (350°F).
  • Grease two 8-inch round cake pans and line the bases with parchment paper.
  • Lightly dust with flour and set aside.
  • In a large mixing bowl, beat 170 grams unsalted butter, softened and 1.5 cups caster sugar together using an electric mixer on medium-high speed until the mixture is pale, light, and fluffy, about 4 to 5 minutes.
  • Add 3 large eggs one at a time, beating well after each addition.
  • Mix few drops of vanilla essence.
  • In a separate bowl, whisk together 2 cups all-purpose flour, and 2 teaspoons baking powder
  • Gradually add the dry mixture to the butter mixture, alternating with 0.8 cups whole milk, beginning and ending with the flour mixture.
  • Divide the batter evenly between the prepared pans and smooth the tops.
  • Bake for 28 to 30 minutes, or until a toothpick inserted into the centre comes out clean.
  • Remove the cakes from the oven and allow them to cool in the pans for 10 minutes.
  • Then turn out onto a wire rack and cool completely before frosting.

Make the pink frosting:

  • Beat 200 grams unsalted butter, softened until smooth and creamy.
  • Gradually add 3 cups icing sugar, sifted and mix on low speed.
  • Add 3 tablespoons heavy cream, few drops of vanilla essence, and pinch of pink food color.
  • Increase speed to high and beat for 3 minutes until fluffy and evenly pink.

Frost and assemble:

  • Place one cake layer on a serving plate and spread a generous layer of pink frosting on top.
  • Place the second layer over it and frost the top and sides evenly.
  • Decorate with sprinkles, fresh berries, or edible flowers for a beautiful finish.
