Ingredients
For the Cupcakes:
- 1½ cups all-purpose flour

- ½ cup unsalted butter, softened
- ¾ cup sugar
- 2 eggs
- ½ cup milk

- ½ cup finely chopped mixed fruits (apple, pineapple, cherries, or tutti frutti)

Method
- Preheat the oven to 180°C and line a cupcake tray with paper cupcake liners.
- In a bowl, sift together the flour, baking powder, and baking soda.
- Set aside.
- In another bowl, beat the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Add few drops of vanilla essence.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk.
- Mix gently until smooth.
- Fold in the chopped fruits or tutti frutti.
- Add pinch of red food colour and mix lightly.
- Fill each cupcake liner about two-thirds full with batter.
- Bake for 18–22 minutes or until a toothpick inserted into the centre comes out clean.
- Let the cupcakes cool completely on a wire rack.
- Decorate with whipped cream, buttercream frosting, fruit pieces, or colourful sprinkles if desired.
- Serve and enjoy!
